wejetset cooks: Moqueca from Bahia, Brazil

Moqueca is a wonderful dish from the Bahia region of Brazil and it’s really easy to prepare. It’s a stew made with fish (usually, shrimp or crab), onions, tomatoes, coconut milk, cilantro and dendê oil. I have tried making it a few times at home and I find the dish works best with shrimp.
You start by marinating a half-pound of shrimp in lime juice (this gives the shrimp a nice plumpness and cuts down on cooking time) – while the shrimp is in the fridge, sauté red onions in olive oil. After they’re translucent add tomatoes (I recommend canned peeled plum tomatoes). After five minutes, add two cups coconut milk. Let everything simmer for about twenty minutes, then add the shrimp and turn off the heat (the acids in the lime juice have already cooked the shrimp). Garnish the stew with chopped cilantro and a little dendê oil (it’s very spicy) and your homemade Brazilian dish is complete.
